Kosher Carbonara (without any pork or cheese) seems like an impossible mission, but it is actually quite easy, and we will teach you how!

You should try this recipe if you follow a josher diet, but also if you want to try and make a lighter version and more easily digestible of the traditional Carbonara.

This recipes requires the use of chitarrini, also known as tonnarelli, a fresh pasta shape very similar to thick spaghetti. Fresh pasta allows the condiment to be completely absorbed. Pork pancetta is here replaced with beef cheek, easily found in most kosher butchers.

Ingredients

  • 380 gr of Tonnarelli fresh pasta
  • 200 gr of Beef Cheek Kosher
  • 2 egg yolks
  • 1 egg whole
  • 1 spoonful of Olive Oil Extra Virgin
  • s.q. Black pepper
  • s.q. hot pepper
  • s.q. Salt

Istructions

  1. Cut the beek cheek in small pieces, and let cook in a pan with a little olive oil and hot pepper until it seems crunchy enough.
  2. Start cooking the chitarrini in abundant salted boiling water. In the meantime, beat the eggs in a separate bowl.
  3. When draining the pasta, remember to keep some of the water the pasta was cooked in. When the pasta is cooked, mix the eggs and some of the water from the pasta with the chitarrini, to make the sauce extra creamy.
  4. Plate the pasta, and add some crunchy beef cheek and black pepper to each portion.
